  1. Manual Sorting: Damaged, underripe, or deformed fruits are manually removed to ensure uniform size and appearance.
  2. Ripeness & Weight Measurement: Specialized machines assess each durian’s weight and ripeness level, selecting only the ideal ones.
  3. Pre-Chilling & Cleaning: Selected fruits are cleaned and pre-chilled to stabilize temperature and prevent microbial contamination before segmenting and freezing.

The extracted segments are flash-frozen using Individual Quick Freezing (IQF) at -40°C. This state-of-the-art process freezes each segment separately, maintaining:

The 5-Step IQF Durian Production Process:

  1. Harvest & Input Inspection:
    Only durians with optimal ripeness and no physical defects proceed to the next stage.
  2. Segmenting – Grading – Cleaning:
    Durians are carefully opened and sorted by segment size, flesh color, and creaminess, then washed to remove impurities.
  3. IQF Freezing:
    Segments are individually frozen at -40°C to preserve structure, taste, and nutrients.
  4. Vacuum Packaging:
    Vacuum-sealed to prevent oxidation, moisture, and preserve shelf life (12–24 months at -18°C). Packaging includes traceability and usage instructions.
