Steps to Prepare Stir-Fried Vegetable Noodles with Beef:
Step 1: Prepare the ingredients and marinate the beef
Wash the choy sum and carrot, then cut them into 3–4 cm pieces. Separate the stems and leaves of the choy sum. Finely chop the garlic and shallots, and place them in a small bowl to marinate the beef. Slice the beef thinly and marinate it with 1 tablespoon of minced garlic and shallots, 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 teaspoon of sugar, and ½ teaspoon of ground pepper. Mix well and let it sit for about 10 minutes.
Step 2: Blanch the vegetables and noodles
Bring water to a boil, then blanch the carrot and choy sum stems for about 10 seconds and remove them. When the water is still boiling, add the vegetable noodles and blanch for 1–2 minutes. Remove the noodles, rinse them under cold water, and drain well. You can add 1 teaspoon of cooking oil to keep the noodles glossy and separate.
Step 3: Stir-fry the noodles with beef
Sauté minced garlic and shallots until fragrant, then add the carrots and all the choy sum stems and leaves. Season with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and ½ tablespoon of seasoning powder. Add all the noodles and stir-fry for about 1 minute. When the seasoning is well absorbed, transfer the noodles and vegetables to a plate. Stir-fry the marinated beef over high heat for 2–3 minutes, then turn off the heat.

Step 1: Prepare the pork ribs and vegetables
Rinse the pork ribs with vinegar and salt to remove any odor. Blanch the ribs in boiling water for about 5 minutes, then rinse again with cold water. Slice the carrot and white radish into 1 cm–thick rounds.
Step 2: Make the broth
Add the ribs, carrot, and white radish to a pot of boiling water and simmer for about 2 hours. Occasionally skim off any foam that forms on the surface.
